I know you’re busy. You work, whether inside your home or outside (perhaps both), you may be a parent, and you’re just as busy as I am. Some days we don’t know whether we’re coming or going, do we? That’s when Colonel Sanders or Ronald McDonald call your name, isn’t it?
That’s why we need good, fast recipes, to arm us to resist their call as often as possible. I have one for you today!
I asked my fans on Facebook what kind of recipe they’d like next from me; the vast majority said “a quick meal!”
This is for you.
This is one super-fast soup, y’all. It’s inexpensive, too! Perfect when you want something different on the table (please, not spaghetti again, mom!), something that wasn’t purchased at a fast food joint, but something that actually is fast and fun to make. Doesn’t that sound perfect?
Here’s the recipe:
Mama Steph’s six-ingredient sausage-gnocchi soup
Ingredients:
8 oz. bulk hot Italian sausage (or if bulk isn’t available, buy links and remove sausage from casings; if hot isn’t available, just add your own red pepper flakes)
16 oz. package vacuum-packed potato gnocchi (found with the dried pasta in the grocery store)
1 can (15 oz.) beef broth
1 can (15oz) Italian stewed (or diced) tomatoes
about 2 cups water
Optional: 10 oz. fresh spinach
3 oz. grated Parmesan cheese, for topping
Method:
In a large soup pot or Dutch oven, brown crumbled sausage over medium – high heat, breaking up with spoon or spatula.
When completely browned, add water, broth, tomatoes, and spinach, if using.. Stir. Bring to a boil while stirring, and turn down so soup is just simmering, not a full boil. Add the gnocchi. Allow to simmer for 3-5 minutes; the gnocchi will float to the top when ready at that time.
Ladle into bowls and top with Parmesan cheese, and salt and pepper, if desired.
Serve with salad and garlic bread.

I had a chance to taste this last Friday on KLTV-7’s “In The Kitchen” … Trust me on this…Amazing flavor, amazing aroma considering it only took a few miutes to prepare. So good!!!
