Say goodbye to summer’s heat with Frozen Mint Brownie Dessert

I’m so excited today; our  meteorologists here at KLTV are telling us that today is the last day of summer-like temperatures in East Texas.  I don’t know how hot it is where you live, but in Tyler we will reach 99 degrees this afternoon.

Tomorrow, though, our high will be around 85, and by Sunday, a mere 79! I love it.  But before it happens, let me share one quick recipe to get us through this last HOT day of 2011.

Frozen Mint Brownie Dessert

Ingredients:

  • 1  9″x13″ pan of brownies, baked and allowed to cool (see my easy recipe here)
  • 1/2 gallon mint chocolate chip ice cream
  • 1/2 cup heavy whipping cream
  • 1 (16-ounce) jar chocolate fudge ice cream topping

Bake the brownies in a 9×13 pan, and allow to cool.

Take the ice cream out of the freezer and allow to soften as you work on whipping the cream with your mixer (until soft peaks form.)

Fold the whipped cream into the softened ice cream until mostly combined.  (it’s ok if a bit streaky.)

Alternately drop dollops of creamy ice cream mixture and of fudge sauce over the brownies.  Swirl with back of a big spoon or spatula if you would like to make a pretty pattern.

When all cream and fudge sauce is on top of the brownies, spread a sheet of waxed or parchment paper over brownies and press down to flatten.

Freeze 4 to 6 hours.  Cut into squares to serve.

  1. Sounds delicious, and definitely a nice treat for those last hot days of summer! It’s about 82 in Maryland right now, and we’re supposed to get down to 60 on Saturday and Sunday. Fall is here! So excited!
