When I was really young and my family lived in Charlotte, North Carolina, I had a neighborhood full of other children to play with.  There were Angie (my best friend), her  brother Andy, brothers Paul and John-John, and my next door neighbors Sissy and her brother John.  Others came and went, too, over the years. 

We lived on a cul-de-sac at the top of a hill; the street was called Ivanhoe Place.  It was the early ’70s, and my life revolved around my friends and playing with Barbies and baby dolls and riding my Big Wheel.  It was a great time to be a kid!  

During the summer, we’d work up a sweat riding around in the early morning summer sun, and we’d all go inside at ten to watch Sesame Street. We’d go back outside afterward, and play for an hour or two before our lunchtime.  Guess what I had for lunch?  At that age, my favorite lunch was Spagetti-Os.  

After lunch, we’d all head outside with sweaty little palms full of coins that our mothers gave us, go down to the corner across from Paul and John-John’s house, stand by the fire hydrant, and wait. 

And wait.  

We’d strain our little ears to hear the sweet sound of the happy, tinkling music of the ice cream man’s truck. We’d get so excited when we’d hear it in the distance that we’d jump up and down and laugh and strain our eyes to see the first glimpse of his truck coming around the corner.  

My favorite treat from the ice cream man was the push-up.  I love that creamy orange sherbet flavor to this day.  I also loved creamsicles, with the orange sherbet swirled with vanilla ice cream.  It’s so good! 

Well, I have come across a cookie recipe that is reminiscent of the flavor of the Push-Up/Creamsicle.  It would be GREAT with vanilla ice cream sandwiched in-between two of them.  Please, please try it. 🙂 It’ll make you smile, and that’s why I am here. I want to make you happy! 

Here’s the recipe:

Creamsicle Cookies

Ingredients:

2 1/2 c. plain flour
3/4 tsp. baking soda
1/2 tsp. salt
1 c. unsalted butter, softened
1/2 c. granulated sugar
1/2 c.  light brown sugar, packed
1 egg
1 TBS grated orange peel
2 c. (12 ounce package) Nestle Toll House Premier White Morsels

Method:

Preheat oven to 350.  Combine flour, baking soda, and salt in small bowl.  Beat butter granulated and brown sugar in large mixer bowl until creamy.  Beat in egg and orange peel.  Gradually beat in flour mixture.  Stir in white chocolate chips.  Use a cookie scoop (I use the OXO medium cookie scoop) or a spoon to place dough onto ungreased baking sheets.  Bake for 10 to 12 minutes until edges are light golden brown.  Let stand for 2 minutes; remove to wire racks to cool completely.  Makes approximately 3 dozen cookies.
