MamaSteph’s Cookies for Santa: Cranberry-white chocolate chip with walnuts

Cookies for Santa are a tradition in my home; yours, too, I bet.  I remember making sure that mom set out cookies for Santa so that he’d have a snack after he left Sherrin and me our gifts.  On Christmas morning, there were only crumbs left on the plate, and the milk glass was empty!  How exciting!

Today I’m going to share with you a great recipe that you might enjoy making for Santa, to leave on his very own plate; I’m sure that he won’t mind if you and your family eat the rest!  I don’t remember where I first found the basic recipe, but whoever invented these was pretty brilliant! They contain dried cranberries, which, unlike fresh cranberries, are available year-round, as well as walnuts and white chocolate chips.  You might try this recipe with chopped dried cherries if you are not a fan of dried cranberries.

MamaSteph’s Cranberry-White Chocolate Chip Cookies w/Walnuts

INGREDIENTS
* 1/2 cup salted butter, softened
* 1/2 cup packed brown sugar
* 1/2 cup white sugar
* 1 egg
* 1 tablespoon vanilla
* 1 1/2 cups all-purpose flour
* 1/2 teaspoon baking soda
* 1 cup white chocolate chips
* 1 cup dried cranberries
*1/2 cup chopped walnuts (optional)

DIRECTIONS

1.      Preheat oven to 375.

2.       In a large bowl, cream together the butter, brown sugar, and white sugar until smooth.

3.      Beat in the egg and vanilla.

4.      Combine the flour and baking soda; stir into the sugar mixture. Mix in the white chocolate chips and cranberries.

5.      Use a cookie scoop (I use the OXO Good Grips medium size scoop) and place scoops of dough on a nonstick cookie sheet, or use parchment paper to line sheets before placing and baking cookies.

6.      Bake for 8 to 10 minutes in the preheated oven. For best results, take them out while they are still soft, being careful not to overcook. Allow cookies to cool for 1 minute on the cookie sheets before transferring to wire racks to cool completely.
