I received a unique cookie order from an out of town acquaintance last week; she sent me a message to ask if I’d make some cookies for her friend and deliver them to his office. She said, “These have to be special; Subway’s cookies aren’t going to cut it.” She said she specifically needed white chocolate chip-macadamia nut cookies for her friend. “No problem,” I said.
And I began searching for a really yummy recipe that would be special enough for these friends. I think I’ve found it!
Before I share the recipe, let me say that I love friends. I’m sorry if that seems obvious. It’s just that I’ve had, at times, a deficit of friends, and at other times, an abundance. I can tell you, honestly, that the times when I had few friends, as a young mom at home with three children, ages newborn, 14 months, and three years, I battled sadness a lot of the time. Family is wonderful! But we need friends, too.
When we moved to Texas in 1998, I was trepidatious. I didn’t know anyone in East Texas! But sometimes what we fear most is what turns out to be the best thing that ever happened to us. The day we moved into our house a neighbor named Charlotte walked across the street to invite us to a community group from her church which met at her home on Sunday nights. Going to that group, I met a friend named Angela, and both of these women have meant the world to me ever since. Through them, I’ve met many others…..and of course others have come through many different channels now, after 12 years of life in Texas. I’m thankful. Friends are so valuable, you guys. Let’s remember to let our friends know we appreciate them, whether it is by calling them to check on them, meeting up for coffee to talk, going to their home to help them when they are sick or overwhelmed, or maybe making them some of these cookies!And keep an eye out for a person who is in the same season in her life that I was at one time; walk across the street. Put love into action! You won’t be sorry. 🙂
White Chocolate Chip Macadamia Nut Cookies
based on a recipe on The Whipped Blog, which is lovely. You should visit!
1 cup unsalted butter, softened
1 cup granulated sugar
3/4 cup light brown sugar, packed
2 teaspoons real vanilla extract
1/2 teaspoon salt
2 1/2 cups all purpose flour
1 teaspoons baking soda
12 ounce bag white chocolate chips
1 cup chopped macadamia nuts (Not the salty ones)
Heat oven to 375 F. (I had to lower my oven temp to 350, as they were browning too quickly.) Stir together flour, baking soda and salt in a mixing bowl. In large bowl, beat butter, granulated sugar, brown sugar, and vanilla with electric mixer until creamy. Add eggs, beat well. Gradually add dry ingredients to butter mixture, beating until well blended. Stir in white chocolate chips and macadamia nuts. Drop by rounded teaspoons onto ungreased cookie sheet. Bake 8 to 10 minutes or until set. (Edges are golden brown and center is set.) Cool slightly, remove from cookie sheet to wire rack to cool completely.
